CHICKEN MAIN DISH RECIPES

CHICKEN FAJITAS
1 pound chicken, cooked and shredded
1 Tb olive oil
1 each green, red and yellow bell peppers, thinly sliced
1 medium onion, thinly sliced
2 cloves garlic, minced
1/4 tsp salt
1/2 tsp cumin
1/2 tsp pepper
1/4 cup lemon juice
8 flour tortillas, warmed
salsa
sour cream

In large skillet heat oil.  Add chicken, peppers, onion, garlic, salt, cumin and pepper.  Cook and stir until peppers are crisp tender.  Stir in lemon juice and cook 1 minute longer.  Serve in tortillas.  Add salsa and sour cream to each serving.

GRILLED CHICKEN ALFREDO PIZZA WITH CARAMELIZED ONIONS
1 pound chicken breast
4 onions, sliced in rings
5 Tb butter
4 Tb brown sugar
1 jar Alfredo sauce
2 cups cheddar cheese

Grill chicken breast and cut into bite size pieces.  While chicken is grilling slice onions and put in frying pan with butter.  Cook on medium low heat while stirring constantly.  When onions turn a light caramel color add brown sugar.  Allow to melt and remove from heat.  On prebaked pizza crust pour the jar of Alfredo sauce.  Place caramelized onions and chicken on top.  Sprinkle with cheese.  Bake @ 450 for 15 - 20 minutes or until cheese and crust is golden.

TURKEY MAIN DISH RECIPES

TURKEY BURGERS
1 pound ground turkey
1 egg, beaten
1/4 cup oatmeal
1 cup shredded cheddar cheese
2-3 cloves garlic, minced
1 Tb Worcestershire sauce

Mix ingredients together and shape into four patties.  Grill on George Foreman grill or fry in pan until juices run clear. (they will fall through a grill with a rack in it)  Serve on toasted buns.

PASTA MAIN DISH RECIPES

EASY MAC 'N' CHEESE
16 oz elbow macaroni, cooked
2 cups milk
6 Tb flour
salt & pepper
2 Tb butter
2+ cups shredded cheddar cheese
crushed crackers

In saucepan, heat milk, flour, salt & pepper.  Wisk until smooth and continue until boils.  Add cheese and butter until they melt.  Pour macaroni and cheese sauce into 2 quart baking dish.  Sprinkle with cheese and crushed crackers.  Bake @ 350 for 15-30 minutes.

PEPPER TORTELLINI
19 oz frozen cheese tortellini
1/2 cup julienned red pepper
1 cup whipping cream
2 tsp basil
1 Tb green onion
1/4 cup butter
3 garlic cloves, minced
1/4 cup walnuts, finely chopped

Prepare tortellini according to package direction.  In a skillet, saute red pepper and garlic in butter until pepper is crisp-tender.  Stir in cream; cook for 8-10 minutes or until slightly thickened.  Add walnuts, basil and onion; heat through.  Drain tortellini; add to sauce and toss to coat.


BEEF
MAIN DISH RECIPES

LASAGNA
1/2 pound ground beef
1/2 pound ground sausage
1 pint cottage cheese
1-1 1/2 jar spaghetti sauce
4 cups (16 oz) mozzarella cheese
12 lasagna noodles, partially cooked

Brown meat in skillet.  In a 9x13 pan layer 3 lasagna noodles across lengthwise and 1 lasagna noodle across the top.  Layer sauce, meat, cottage cheese and mozzarella cheese on top of noodles.  Repeat twice more ending with mozzarella cheese.  Cover with foil and bake @ 350 for 1 hour.  Remove foil and bake 10 minutes longer for cheese to melt and brown slightly.  Let sit 10 minutes before serving.

MEAT LOAF
1 pound ground beef
1 pound ground sausage
2 eggs
1/4 cup milk
2 cups bread crumbs or cracker crumbs
1 onion, diced
1 tsp Worcestershire sauce
1 tsp garlic powder
1 tsp italian seasoning
salt & pepper

Beat eggs, add milk, onions, Worcestershire sauce, garlic powder, italian seasoning, salt and pepper.  Mix in bread crumbs or crackers and let sit a couple minutes.  Crumble ground beef and sausage over the top.  Mix together and form into two loaves.  Place on foil covered cookie sheet.  Bake @ 350 for 1 hour.

SLOPPY  JOES
1 pound ground beef
1 cup chopped onions
1 cup chopped celery
1 1/2 cups canned tomatoes
1/4 cup ketchup
1/3 cup water
2 Tb vinegar
3 Tb brown sugar
1 1/2 tsp mustard
1 1/2 tsp salt
2 Tb flour

Brown hamburger.  Add onion, celery and remaining ingredients.  Heat until bubbly and starts to thicken.  Add more flour if needed.  Simmer for 15-20 minutes.  Serve on toasted buns.

EASY STROGANOFF
2-3 cups roast, cubed
1 small onion, chopped
2 garlic cloves, minced
1 tsp olive oil
1 can cream of mushroom soup, undiluted
1 cup milk
1 can mushrooms
2 Tb ketchup
1 tsp beef bouillon granules
1 cup sour cream
salt & pepper
egg noodles, cooked

Cook and stir beef, onion and garlic in oil until onion is tender.  Stir in soup and milk until blended.  Add mushrooms, ketchup, bouillon, salt and pepper; mix well.  Bring to a boil.  Reduce heat; simmer uncovered for 8-10 minutes or until heated through.  Remove from heat and add sour cream.  Serve over egg noodles.
