Brownie Biscotti
1/3 cup butter, softened
2/3 cup white sugar
1 tsp vanilla
1 3/4
cup flour
1/3 cup unsweetened cocoa powder
2 eggs
2 tsp baking powder
1/2 cup chocolate chips
1/4
cup chopped walnuts (optional)
1 egg yolk, beaten
1 Tb water
Cream together butter and sugar. Beat
in eggs and stir in vanilla. Combine flour, cocoa and baking powder; stir into creamed mixture. Mix in chocolate
chips and walnuts.
Divide dough into 2 equal parts. shape into 2x9 inch loaves. Place onto greased
baking sheets. combine egg yolk and water, brush over loaves.
Bake @ 375 for 20-2 miuntes or until firm.
Cool on cookie sheet for 30 minutes. Slice diagonally 1 inch slices. Place on ungreased cookie sheet and
bake for an additional 10-15 minutes on each side. Cool on wire racks.
Cheese Cake
1/2 cup butter
1/4 cup sugar
1 1/4 cup graham cracker crumbs
Combine ingredients and pat firmly on bottom of 9 inch spring form pan.
3 (8oz) pkgs cream cheese
1 (14oz)
can sweetened condensed milk
4 eggs
2 tsp vanilla
In a large bowl, beat cheese until fluffy. Add
sweetened condensed milk. Beat until smooth. Add remaining ingredients and mix well. Pour into prepared
pan.
Bake 1 hour and 5 minutes @ 350 or until cake springs back when lightly touched. Cool to room temperature
and chill.
For Chocolate Cheesecake:
Add 8-12 oz melted chocolate chips.
Chocolate Sundae Pie
4oz cream cheese, softened
1/2 cup sweetened condensed milk
4 tsp
baking cocoa
1 carton (8oz) frozen whipped topping, thawed
1 chocolate crumb crust (9inch)
1/2 cup chocolate
syrup
1/2 cup caramel sauce
1/2 cup candy bar of your choice
nuts (optional)
In a mixing bowl, beat
cream cheese until smooth. Add milk and cocoa; beat until smooth. fold in the whipped topping. Spoon into
crust. Drizzle with the chocolate syrup, caramel sauce and candy bar.
Freeze overnight.
Chocolate Zucchini Cake
1/2 cup butter
1/2 cup oil
1 3/4 cup sugar
2 1/2 cup flour
1 tsp baking powder
1 tsp baking soda
2 cups zucchini, grated
2 eggs
1 tsp vanilla
1/2 cup sour
milk
4 Tb cocoa
1/2 tsp cinnamon
1/4 cup chocolate chips
Cream together the butter, oil and sugar.
Add eggs, vanilla and sour milk. Tip: To make sour milk mix 1/2 Tb lemon juice with 1/2 cup regular milk.
Mix well. Add dry ingredients after sifting them together. Beat well. Add zucchini last and mix
evenly. Put into a 9x13 pan. Sprinkle with chocolate chips.
Bake @ 350 for 35 minutes.
Cream Cheese
Frosting:
3oz cream cheese, softened
4 Tb butter, softened
dash salt
2 1/2 cups powdered sugar
1
tsp vanilla
Mix ingredients together and spread on cooled cake.
