Banana Chip Cake

1 cup sugar or honey
1 stick butter
3 bananas, mashed
2 eggs
2 cups flour
1 tsp baking soda
1/2 cup chocolate chips
1 tsp vanilla

Mix ingredients together; don't over mix.
Pour into a greased 8 inch pan.
Bake @ 350 30-40 minutes.

Brownie Biscotti

1/3 cup butter, softened
2/3 cup white sugar
1 tsp vanilla
1 3/4 cup flour
1/3 cup unsweetened cocoa powder
2 eggs
2 tsp baking powder
1/2 cup chocolate chips
1/4 cup chopped walnuts (optional)
1 egg yolk, beaten
1 Tb water

Cream together butter and sugar.  Beat in eggs and stir in vanilla.  Combine flour, cocoa and baking powder; stir into creamed mixture.  Mix in chocolate chips and walnuts. 
Divide dough into 2 equal parts.  shape into 2x9 inch loaves.  Place onto greased baking sheets.  combine egg yolk and water, brush over loaves. 
Bake @ 375 for 20-2 miuntes or until firm. 
Cool on cookie sheet for 30 minutes.  Slice diagonally 1 inch slices.  Place on ungreased cookie sheet and bake for an additional 10-15 minutes on each side.  Cool on wire racks.

Cheese Cake

1/2 cup butter
1/4 cup sugar
1 1/4 cup graham cracker crumbs

Combine ingredients and pat firmly on bottom of 9 inch spring form pan.

3 (8oz) pkgs cream cheese
1 (14oz) can sweetened condensed milk
4 eggs
2 tsp vanilla

In a large bowl, beat cheese until fluffy.  Add sweetened condensed milk.  Beat until smooth.  Add remaining ingredients and mix well.  Pour into prepared pan.

Bake 1 hour and 5 minutes @ 350 or until cake springs back when lightly touched.  Cool to room temperature and chill.

For Chocolate Cheesecake:
Add 8-12 oz melted chocolate chips.

Chocolate Sundae Pie

4oz cream cheese, softened
1/2 cup sweetened condensed milk
4 tsp baking cocoa
1 carton (8oz) frozen whipped topping, thawed
1 chocolate crumb crust (9inch)
1/2 cup chocolate syrup
1/2 cup caramel sauce
1/2 cup candy bar of your choice
nuts (optional)

In a mixing bowl, beat cream cheese until smooth.  Add milk and cocoa; beat until smooth.  fold in the whipped topping.  Spoon into crust.  Drizzle with the chocolate syrup, caramel sauce and candy bar.
Freeze overnight.

Chocolate Zucchini Cake

1/2 cup butter
1/2 cup oil
1 3/4 cup sugar
2 1/2 cup flour
1 tsp baking powder
1 tsp baking soda
2 cups zucchini, grated
2 eggs
1 tsp vanilla
1/2 cup sour milk
4 Tb cocoa
1/2 tsp cinnamon
1/4 cup chocolate chips

Cream together the butter, oil and sugar.  Add eggs, vanilla and sour milk.  Tip:  To make sour milk mix 1/2 Tb lemon juice with 1/2 cup regular milk.  Mix well.  Add dry ingredients after sifting them together.  Beat well.  Add zucchini last and mix evenly.  Put into a 9x13 pan.  Sprinkle with chocolate chips.
Bake @ 350 for 35 minutes.

Cream Cheese Frosting:
3oz cream cheese, softened
4 Tb butter, softened
dash salt
2 1/2 cups powdered sugar
1 tsp vanilla
Mix ingredients together and spread on cooled cake.


Flourless Chocolate Cake

8 oz dark chocolate, broken into pieces
Tip: 1 cup cocoa powder + 4oz vegetable oil = 8oz chocolate)
1 cup sugar
1 cup butter
1/2 cup strong coffee (espresso or instant is fine)
5 eggs, separated
2 tsp vanilla

Break up chocolate or mix up and melt with butter and 1/2 of sugar over double boiler.  Add strong coffee and vanilla.  Let cool slightly.  Whip egg whites just before soft peaks form and add the rest of the sugar.  Fold the egg yolks into the chocolate mixture.  Add the meringue and fold together, do not over mix.  Pour into a 10 inch spring form pan lined with foil.  Rub inside of foil with butter.
Bake @ 350 for 1 hour or until cake is set.

Freezer Apple Pies

This recipe is for the fall when you have an abundance of apple.  You will have apple pie to pop in the oven all year long!

Makes 8-10 pies

8-10 foil pie plates
48-60 apples (more or less), peeled and sliced

Crusts:
10 cups flour
4 cups butter
1 Tb salt
2 cups water

Cut butter into four and salt until crumbly.  Add water and mix.  Divide into 8 to 10 sections.  Divide each section in half.  Roll out your crusts.

Sugar Mixture:
3 3/4 cups sugar
3 tsp cinnamon
1/4 cup flour
1/4 tsp salt

For each pie place one crust into the pie plate, add 1/4 cup sugar mixture, top with about 6 apples, peeled and sliced, top with 1/4 cup sugar mixture and place your top crust on and seal.  Place prepared pie into a gallon freezer size ziplock bag to freeze.

To Bake:
Fresh pie bake @ 350 for 1 hour.
Frozen pie bake @ 450 for 15 min and then turn oven to 350 and continue to bake for 1 hour.

Oreo Balls

1 8oz pkg cream cheese
1 pkg oreo cookies
1 pkg almond bark

Melt cream cheese to stir, crush oreos and mix together.  Roll into balls.  Freeze for 10 minutes.  Melt almond bark over double boiler.  Dip chilled balls into melted almond bark.  Cool in refrigerator when complete.

Raspberry Pie

Crust:
1/3 cup butter
1 1/2 cup flour
5-6 Tb water
Cut together butter and flour.  Add one tablespoon of water at a time.  Divide dough in half and roll out two crusts. 

Fillings:
4 cups raspberries
1 cup sugar
1/3 cup flour

Mix ingredients together.  Heat in microwave or on stove until bubbles and is thickened. 
Cover edges of crust with foil and bake @ 375 for 25 minutes.  Remove foil and bake another 20-25 minutes, until golden on top.

How To Make Sweetened Condensed Milk

1 cup + 2 Tb instant dry milk powder
1/2 cup warm water
3/4 cup white sugar

Mix sugar and dry milk powder together.  add warm water and mix well.  Place in a double boiler until sugar is dissolved.  Store in refrigerator.  Makes 1 cups.
