Almond Crunch Cookies

1 cup sugar
1 cup powdered sugar
1 cup butter, softened
1 cup oil
1 tsp almond extract
2 eggs
4 1/2 cups flour
1 tsp baking soda
1 tsp salt
1 tsp cream of tartar
2 cups coarsely chopped almonds
6 oz. pkg almond baking chips
Sugar

Mix butter, oil, sugar and powdered sugar together until well blended.  Add almond extract and eggs.  Blend in baking soda, salt and cream and cream of tarter with the flour.  Add flour mix one cup at a time.  Stir in almonds and baking chips.  Refrigerate for 30 minutes.  Shape into balls and roll in sugar.  Place on cookie sheets and in a criss-cross pattern flatten with fork.  Bake @ 350 for 12 to 18 minutes.

Chocolate Chip Cookies

1 cup butter, softened
3/4 cup brown sugar
3/4 cup white sugar
2 eggs
2 tsp vanilla
1 tsp baking soda
1/2 tsp salt
2 1/2 cups flour
2 cups chocolate chips

Mix butter and sugars together until well blended.  Add eggs and vanilla, stir.  Mix baking soda, salt and flour together.  Add flour mix one cup at a time.  Add chocolate chips to dough.  Place rounded teaspoon balls of dough on cookie sheet.  Bake @ 300 for 20 minutes.

Chocolate Cookies

1 cup butter, softened
1 1/2 cups sugar
2 eggs
2 tsp vanilla
2 cups flour
2/3 cup cocoa
3/4 tsp baking soda
1/4 tsp salt
2 cups chocolate chips

Cream butter and sugar together.  Add eggs, and vanilla.  Mix flour, cocoa, baking soda and salt together.  Add flour mixture one cup at a time to creamed mixture.  Stir in chocolate chips.  Bake @ 350 for 8-10 minutes.


Oatmeal Banana Chocolate Chip Cookies

*A great way to use up overly ripe bananas.

3/4 cup butter
3/4 cup brown sugar
3/4 cup white sugar
1 egg
1 tsp vanilla
1 cup bananas, mashed
1 cup flour
1 tsp salt
1 tsp cinnamon
1 tsp baking soda
3 cups oatmeal
2 cups chocolate chips

Cream butter and sugars together.  Add egg and vanilla.  Mix together flour, salt, cinnamon and baking soda.  Add flour mixture one cup at a time.  Mix banana in well.  Add oatmeal and chocolate chips to dough.  Bake @ 350 for 12-15 minutes.  This is a most cookie - good to store in the refrigerator.  Can also be frozen for 3 to 6 months.

Oatmeal Chocolat Chip Cookies

3/4 cup butter
1 cup brown sugar
1/2 cup sugar
1 tsp baking powder
1/4 tsp baking soda
1/2 tsp cinnamon (optional)
2 eggs
1 tsp vanilla
1 3/4 cups flour
2 cups oatmeal
1-2 cups chocolate chips

In a large bowl beat butter, sugars, baking powder, soda and cinnamon.  Add eggs and vanilla.  Stir in flour, oats and chocolate chips.  Bake @ 375 for 10-12 minutes.

Zucchini Granola Cookies

3/4 cup butter
1/2 cup brown sugar
1 egg
1 tsp vanilla
3 1/2 cups flour
3 cups granola
1 tsp baking soda
1 tsp salt
3 cups zucchini
2 cups chocolate chips

Cream butter and brown sugar.  Beat in egg and vanilla.  Combine flour, granola, baking soda and salt.  Add to creamed mixture alternating with zucchini.  Stir in chocolate chips.  Bake @ 350 for 8-10 minutes.

These cookies are moist becuase of the zucchini.  Keep them in the refrigerator to prolong freshness.
