TIP:  Where is a warm place to let your dough rise?  Place your covered dough into your oven.  Allow to preheat for 1 minute and then turn your oven off.  A draft free, warm place to let your dough rise!

PIZZA CRUST
Makes 2 Thick Crusts
2 Tb yeast
2/3 cup warm water
2 tsp sugar
Sprinkle yeast and sugar over warm water.  Let stand about 10 minutes.

2 cups cold water
3 Tb olive oil
2 Tb sugar
2 cloves garlic minced
1 tsp salt
1 Tb Italian seasoning
6 cups flour

In large bowl mix cold water, oil, sugar, garlic, salt, italian seasoning and one cup of flour.  Beat until well mixed; add yeast mixture.  Add flour one cup at a time until a soft dough forms.  Knead on counter until a soft springy dough forms (not dry or stiff).  Let rise in a greased bowl covered for 1 hour. 

Preheat oven to 450.  Prebake 5-8 minutes.  Bake pizza until crust is brown on edges and sounds hollow when tapped. 

Melt 2 Tb butter & 1/2 tsp garlic salt.  Spoon on edges of crust after taken out of oven.

APPLE OATMEAL MUFFINS
1 medium apple, cored & finely diced
1 egg
1 cup buttermilk
1 cup oats
1/2 cup whole wheat flour
1/2 cup white flour
1/4 cup honey
1 1/2 tsp baking powder
1 1/2 tsp cinnamon
1/2 tsp salt
1/2 cup raisins - optional

Mix oats, flours, baking powder, cinnamon and salt together. Add egg, honey and apples to oat mixture.  (and raisins if using)   Mix together until well blended. Pour into greased muffin pan, with or without papers, about 1/2 full.  Bake @ 350 for 20-25 minutes.


HONEY WHOLE WHEAT
1 1/8 cup hot water (110*)
3 1/2 Tb honey
1/4 tsp salt
1 1/2 cups whole wheat flour
1 1/2 cups white flour
2 Tb olive oil
1 1/2 tsp yeast

Mix hot water, honey and yeast together.  In another bowl mix salt, whole wheat flour, white flour and olive oil together.  Add yeast mixture to flour mixture.  Stir until too difficult, turn onto counter and knead ingredients together and continue to knead until a soft springy dough forms.  Place in greased bowl covered until doubled in size.  Punch dough down and form into a loaf.  Place in greased pan covered for about 35-45 minutes until doubled in size.  Bake in preheated 350 oven for about 30 minutes.

BASIC WHITE BREAD
Makes 2 loaves
2 pkgs yeast (about 2 Tb)
3/4 cup warm water
2 cups lukewarm milk
3 Tb sugar
3 Tb butter
1/2 Tb salt
1 cup wheat flour
6-7 cups white flour

Scald milk in pan, let cool some.  Melt butter into milk.  Mix yeast, warm water, sugar, milk and butter in a bowl.  Let sit 5 - 10 minutes for yeast to react with sugar.  Add salt and wheat flour to yeast mixture, mix well.  Add one cup of flour at a time until dough is no longer sticky.  Turn out on counter and knead in reamining flour needed to end up with a soft springy dough.  Place in greased bowl covered for one hour or until doubled in size.  Punch dough down, form into two loaves and place in greased bread pans covered.  Let rise again until doubled.  Bake @ 425 for 25-30 minutes or until golden brown.
